Learn to prepare a delicious typical Panamanian “bandera”

Today, thanks to our beloved chef Adelaido Moran at the Hotel Riu Playa Blanca, we’re going to show you how to prepare a delicious dish from Panama: a typical Panamanian bandera, or flag. You can rest assured that if you serve this delicacy to your guests, they’re going to love it and, above all, be surprised. If you want to learn how to cook this dish, keep reading.

To prepare this exotic recipe for four people, you’ll need the following ingredients:

 

6 chicken breasts

1 kg of rice

2 onions

2 carrots

Olives

Capers

Cilantro

Half a tablespoon of paprika

1 litre of water

Salt

4 bananas

4 tablespoons of brown sugar.

2 cups of orange juice

3 cinnamon sticks

Grated cheese

1 tablespoon of grated coconut

 

Let’s get started! First, sauté the finely chopped onion and carrot in oil. Then add the chicken breast cut into cubes. When these ingredients are golden brown, add the rice, a pinch of salt, the paprika and the litre of water. Three minutes before cooking is done, add the olives and capers to taste, and the cilantro. When that’s done, we’ll move on to the bananas: split them in half, cut each half into three pieces, and fry them. Meanwhile, in another pan, caramelise the brown sugar and orange juice. Add the cinnamon and fried bananas. Let the mixture cook for 10 minutes and then remove from the fire and, once on the plate, add the grated cheese and coconut.
