Learn to cook an authentic Majorcan cuttlefish sauté
25 May, 2017Majorca is a destination you always want to go back to. So that you won’t miss this marvellous island so much after you leave, today we’re going to tell you how to make a Majorcan sauté. This dish can be based on different main ingredients: meat, vegetables, seafood… But today we’re going to show you how to make it with cuttlefish. José Manuel Jiménez, the chef at the Hotel Riu San Francisco, shares his recipe for preparing this delicious traditional dish.
These are the ingredients you will need to serve eight people:
1 kg of cuttlefish
150 g of courgette
150 g of aubergine
2 bunches of scallions
150 g of red pepper
200 g of potatoes
50 g of raisins
4 cloves of garlic
2 chili peppers
2 stalks of fennel
200 ml of olive oil
Salt to taste
Let’s get started! First, cut up each ingredient separately, into quarter-inch cubes approximately. Next, heat up the olive oil in a frying pan. When it’s hot, sauté the ingredients one at a time. Salt to taste while cooking. As you finish with them, set them aside in a bowl. When all the ingredients are ready, combine them all in the same frying pan to heat them and blend the flavours. Finish off the dish by adding the fennel stalks, finely chopped.
Extra tip: you can vary the vegetables to adapt the recipe to your tastes. This dish can be served as the main dish or as an appetiser. Serve it accompanied by your favourite bread, we recommend Majorcan brown bread.
